Homemade Chipotle Bowls and Funfetti Cake in a Small Apartment On a Thursday Night

This week was a rough one mainly with my philosophy class, that, and I am feeling off this week. So today I took the local link up the hill to the store and bought some cake mix, oil, and frosting to bake a cake. I’ve been craving a slice recently and figured now would be the best time to bake it.

Plus I’ll have left overs.

Both the cake mix and frosting were on sale. I always look at the ads.  The oil was $3.49 and I already had eggs. Everything was under $10 which is hard to do these days. It feels like you are selling a limb every time you swipe your debit card.

My homemade chipotle bowls are made with brown rice, black beans, corn, I like to use southwest or fire roasted but will use regular if I have to, salsa, shredded cheese, sour cream and Taco Bell fire sauce.

I already have everything at home for the bowls so didn’t have to pick up anything else, I did my grocery shopping earlier this month.

I also have some chocolate ice cream (it was on  sale for $4 and something change) There isn’t much left but there is enough to enjoy with a slice. The cake is now finished but I never ice the whole cake at once. I like to cut a slice and then ice it. 

Well that is all for tonight. 

I just wanted to document a simple Thursday night to look back on when things are different in the future. Going to enjoy this while watching Wild Card on the CW app- it’s free. It’s a refreshingly funny show. I’ll add ice cream later to the bowl. I just wanted to snap a quick picture.
